Ingredients
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- 1/4 cup chopped green onions
- 1 teaspoon red chili flakes
- 1/2 cup peanut oil
- Four 4-ounce chicken breasts
- 4 focaccia rolls (or any quality round crusty sandwich rolls)
- 4 slices provolone cheese
- Romaine lettuce
- 2 tomatoes, sliced
- 1 red onion, thinly sliced
- Aioli (recipe below)
Aioli Ingredients:
- 1/4 cup chopped fresh basil
- 2 egg yolks
- Salt
- Freshly ground white pepper
- 1 tablespoon Dijon mustard
- 2 cups safflower oil
- 1 tablespoon fresh lemon juice
Instructions
- Whip up a zesty marinade by mixing ginger, garlic, green onions, chili flakes, and peanut oil. Toss in the chicken breasts to coat generously, then refrigerate overnight for maximum flavor infusion.
- Preheat your oven to 350F (175C) and get ready to roast perfection.
- Remove chicken from the marinade, place on a roasting pan or baking sheet, and roast for 15-20 minutes until juicy and fully cooked. Slice thinly across the grain for tender bites.
- Crank the oven to 450F (230C) for toasting magic.
- Slice rolls horizontally. Place bottoms cut-side up and tops cut-side down on a baking sheet; top each bottom with provolone. Toast for about 3 minutes until cheese melts into gooey bliss and rolls turn golden.
- Layer sliced chicken over the melted cheese, pile on crisp romaine, fresh tomato slices, and thin red onion rings. Slather aioli on the roll tops and assemble your masterpiecebite into gourmet delight!
Aioli Preparation
- In a blender or food processor, blend garlic, basil, egg yolks, salt, white pepper, and Dijon mustard into a smooth base.
- With the machine running, drizzle in safflower oil slowly until it emulsifies into creamy perfection.
