Movie-Theater Style Popcorn & Clarified Butter
Movie theaters typically use butter-flavored oil, which contains less water than regular butter and helps popcorn stay crisp rather than soggy.
True clarified butter works similarly and clings to kernels for great flavor and texture.
How to Prepare Clarified Butter
1. Melt 2 sticks of butter in a glass measuring cup in the microwave and let it rest a few minutes so it separates into three layers.
2. Carefully skim off the foamy top layer, then slowly pour the clear middle layer (the clarified butter) into a heatproof container, leaving the milk solids at the bottom.
3. Use about 3 tablespoons of warm clarified butter for every 10 cups of popcorn and store the remainder in the refrigerator for sauting or other uses.
