Ingredients:
- 1 medium shallot, finely chopped
- 1 garlic clove, minced
- 2 tablespoons unsalted butter
- 2 to 3 pounds red cabbage, thinly shredded (approximately 10 cups)
- cup red Burgundy wine
- 1 cups balsamic vinegar
- cup granulated sugar
- Salt and freshly ground black pepper to taste
Instructions:
- In a 12-inch skillet, saut the shallots and garlic in butter over medium heat for about 1 minute, until they turn golden. Add the shredded cabbage.
- Pour in the wine to deglaze the skillet, scraping up any browned bits from the pan with a wooden spoon. Mix in the balsamic vinegar and sugar. Season with salt and pepper to taste.
- Raise heat to high and bring the mixture to a boil, stirring continuously to prevent the sugar from scorching. Lower the heat and let it simmer for about 10 minutes until the liquid reduces by approximately three-quarters.
