Ingredients
- 5 pounds carrots, peeled, ends trimmed, sliced diagonally about 1 inch thick
- 1/4 pound butter
- 1/2 cup packed brown sugar
- 1/3 cup Dijon mustard
- 1 ounce honey
- 1 teaspoon fresh thyme, chopped
- Salt and freshly cracked black pepper
Instructions
- Briefly boil the carrots in salted water until just tender. Drain and plunge immediately into ice water to halt cooking. Drain again and set aside.
- In a large frying pan, melt the butter along with the brown sugar.
- Mix in the mustard, honey, and the prepared carrots. Bring the mixture to a gentle simmer and stir until everything is well coated.
- Add the chopped thyme and season with salt and pepper to taste, then serve hot.
