Ingredients

  • 5 pounds carrots, peeled, ends trimmed, sliced diagonally about 1 inch thick
  • 1/4 pound butter
  • 1/2 cup packed brown sugar
  • 1/3 cup Dijon mustard
  • 1 ounce honey
  • 1 teaspoon fresh thyme, chopped
  • Salt and freshly cracked black pepper

Instructions

  1. Briefly boil the carrots in salted water until just tender. Drain and plunge immediately into ice water to halt cooking. Drain again and set aside.
  2. In a large frying pan, melt the butter along with the brown sugar.
  3. Mix in the mustard, honey, and the prepared carrots. Bring the mixture to a gentle simmer and stir until everything is well coated.
  4. Add the chopped thyme and season with salt and pepper to taste, then serve hot.
