Ingredients
- 1 standing rib roast (3 ribs, 7 to 8 pounds)
- 1 tablespoon kosher salt
- 1 1/2 teaspoons freshly ground black pepper
- Mustard Horseradish Sauce (recipe below)
For the Mustard Horseradish Sauce:
- 1 1/2 cups quality mayonnaise
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons whole grain mustard
- 1 tablespoon prepared horseradish
- 1/3 cup sour cream
- 1/4 teaspoon kosher salt

Instructions
- Take the roast out of the refrigerator two hours before cooking to reach room temperatureyour secret to even, succulent results.
- Preheat oven to 500F (see Cook's Note). Position rack in the second lowest slot.
- Place roast bone-side down in a fitted roasting pan. Generously season top with salt and pepper. Roast 45 minutes at 500F.
- Reduce to 325F without removing roast; continue 30 minutes.
- Increase to 450F; roast 15-30 more minutes until center hits 125F (total 90-105 minutes). Meanwhile, whip up the sauce.
- Transfer roast to a cutting board, tent tightly with foil, and rest 20 minutes. Slice thickly and serve with creamy sauce for pure bliss.
Mustard Horseradish Sauce
- Whisk mayonnaise, both mustards, horseradish, sour cream, and salt in a bowl until silky smooth. Chill until servingthis bold, tangy kick elevates every bite!
