  • 1/4 cup (84 grams) honey
  • 2 jasmine tea bags
  • 1 pound fresh strawberries, hulled and sliced (about 3 cups sliced)
  • Pinch of kosher salt
  • One 9-ounce package quick-cooking boba pearls
  • 1 quart milk of any type

  1. Place the honey and 1 cup (240 grams) water in a medium saucepan over medium-low heat. Stir until the honey dissolves. Remove from heat, add the tea bags, and let steep for 10 minutes.
  2. Take out the tea bags, then add the strawberries and a pinch of salt. Bring the mixture to a boil, stirring occasionally, until the strawberries break down and the liquid thickens into a syrup, about 15 to 20 minutes. Strain out the solids and chill the syrup until ready to use.
  3. Prepare the boba pearls following the package instructions (see Cook's Note). Once cooked, drain and let cool for a few minutes. Place a spoonful of boba at the bottom of each serving glass. Pour in 1/4 cup of the chilled strawberry syrup, then fill the glass with milk. Stir gently and serve with a large straw.

Whip up the syrup ahead for convenience, but cook the boba pearls fresh right before serving to keep them perfectly chewy and irresistibleno clumping allowed!
