Ingredients
- 3 large eggs
- 2/3 cup whole milk or heavy cream
- 1/2 to 2/3 cup grated Parmigiano-Reggiano cheese, roughly a couple of handfuls
- Freshly grated nutmeg
- Salt and freshly ground black pepper
- 1 1/2 pounds ground pork
- 2 1/4 teaspoons ground sage or rubbed sage, about half a palmful
- 2 1/4 teaspoons granulated onion
- 1 1/2 teaspoons granulated garlic, about half a palmful
- 2 1/4 teaspoons fennel seed, about half a palmful
- Three pinches of ground cloves or allspice
- 2 tablespoons extra-virgin olive oil
- 8 slices thick-cut, good quality white bread
- 2 tablespoons butter
- 2 cups sliced or halved strawberries
- 1/2 cup thinly sliced or torn fresh basil leaves
- 1 teaspoon sugar
- High-quality honey of your favorite variety, for generous drizzling
Instructions
- Heat a griddle over medium heat.
- In a shallow dish, whisk the eggs with the milk or cream, cheese, nutmeg, salt, and pepper to taste.
- In a medium bowl, combine the pork with sage, onion, garlic, fennel seeds, cloves, black pepper, and salt to your liking. Mix thoroughly. Divide the mixture into four equal parts and shape each portion into two small patties roughly 2 1/2 inches wide. Warm the extra-virgin olive oil in a large skillet over medium heat, then cook the patties for 3 to 4 minutes per side. Turn off the heat and keep the patties warm in the skillet.
- Using a buttered paper towel, wipe the hot griddle. Dip a few slices of bread at a time into the egg mixture, allowing the excess to drip off. Place the soaked bread on the griddle and cook until golden, crisp, and toasted, about 3 minutes per side. Cook in batches as needed.
- While the bread is toasting, mix the strawberries, basil, and sugar in a medium bowl.
- Cut the toasted bread diagonally. Arrange the toast on plates, layer with the sausage patties, drizzle generously with honey, and top with the basil-strawberry mixture.
Transform your breakfast into a crave-worthy delight with this easy savory French toast! Juicy homemade sausage patties, warm honey drizzle, and fresh strawberry-basil topping create an irresistible balance of flavors that'll have everyone at the table smiling.[1][3]
