This one-pan folded egg sandwich is a viral favorite for good reason. I've been perfecting a similar version for years, and it's become a go-to in my kitchen because it's straightforward, delicious, and genuinely fun to make. The technique looks impressive but becomes effortless with just a bit of practiceyou'll be flipping perfect breakfast sandwiches in no time.

Ingredients

  • Nonstick cooking spray
  • 1 slice of ham or 2 slices of Canadian bacon
  • Butter, optional, for frying the eggs
  • 3 large eggs
  • Kosher salt and freshly ground black pepper
  • 2 slices of white bread
  • 1 slice of American cheese

Instructions

  1. Heat a 9 to 11-inch nonstick skillet over medium heat and warm it for 2 to 3 minutes. Lightly spray the skillet with cooking spray for about 2 seconds, then cook the ham or Canadian bacon on both sides until it's heated through and slightly browned. Remove from the pan and set aside on a plate.
  2. Place the bread slices in the skillet and toast each side for about 30 seconds. Remove and set aside.
  3. Spray the skillet once again until thoroughly coated, about 5 seconds. (If preferred, melted butter can replace the cooking spray.) Beat the eggs in a small bowl, then pour them into the skillet. Season with salt and pepper. Lower the heat and let the eggs begin to set, roughly 1 minute. When the top of the eggs is still moist, arrange both bread slices side by side in the middle of the skillet so the eggs set around them.
  4. Flip the entire round of egg along with the bread on top. This will cover the bread slices with egg, resembling an omelet appearance from above. Fold the egg edges over the bread slices while keeping them attached. Place the slice of cheese on the left bread slice. On the right slice, add the ham or Canadian bacon, folding or overlapping as needed to fit inside the bread. Once the egg is completely firm, gently fold the right bread slice over the left one to close the sandwich. Slide the finished sandwich onto a plate and enjoy your perfectly made breakfast treat.
