Sauted Lima Beans with Bacon

Fire up your skillet for this irresistible side dish that transforms humble lima beans into a smoky, zesty delight. Crispy bacon, bright lemon, and fresh parsley make every bite burst with flavorperfect for elevating any meal!

- Heat a large skillet over medium heat. Cook 3 strips of bacon until crispy, about 10 minutes. Transfer to paper towels to drain, then crumble.
- In the bacon drippings, saut 1 small chopped shallot for 1 minute.
- Stir in cup water, two 10-oz boxes thawed frozen lima beans, and tsp kosher salt. Simmer, stirring occasionally, until beans are tender, 57 minutes.
- Mix in 1 tsp grated lemon zest and 1 tsp lemon juice.
- Top with crumbled bacon and chopped parsley. Serve hot and savor the magic!
