Ingredients
- 1 golden pineapple, cut into quarter-inch thick slices

- 1 cup dessert wine (try Gewrztraminer, Moscato, or rum)
- 1 vanilla bean, split and seeds removed
- 3 fresh mint leaves
- 2 cups whipping cream, chilled
- 1/4 cup powdered sugar
- 1/8 teaspoon cinnamon powder
- 1/8 teaspoon powdered ginger
- 1/8 teaspoon nutmeg powder
- 1/2 cup roasted shredded coconut
- One 9-by-9 inch baking vessel
- Foil for covering
Instructions
Preparation and Baking
Begin by taking a stainless steel bowl and mixing together the pineapple slices with granulated sugar, dessert wine, the scraped vanilla bean along with its seeds, and the mint leaves. Transfer this mixture into your baking vessel and cover it securely with aluminum foil. Place it in a preheated oven set to 350 degrees Fahrenheit. Allow it to bake for approximately 30 minutes. During this time, the fruit will develop a beautiful caramelized coating at the bottom of the pan, and the entire mixture will become infused with an aromatic syrup.
Preparing the Spiced Cream
While the pineapple is roasting, you can begin preparing the cream topping. Take your chilled whipping cream and beat it in a mixer until it reaches soft peak stage.
