Ingredients
- 1 can pineapple rings, drained
- 1 teaspoon minced fresh ginger
- 1 teaspoon sea salt
- 2 tablespoons agave syrup
- 2 sheets puff pastry
- 1 egg, lightly beaten
- 1 teaspoon granulated sugar
- 1 pint vanilla ice cream, for serving
- 1/4 cup caramel sauce, for serving
- 1/4 cup sliced almonds, toasted, for serving
Instructions
- Preheat your oven to 400F (200C) and get ready to create a tropical dessert that'll transport you to paradise.
- Reserve 4 pineapple rings for topping. Toss the rest into a food processor with the ginger, salt, and agave syrupblend until silky smooth for that irresistible filling.
- Slice each puff pastry sheet into 4 squares and arrange on a parchment-lined baking tray. Dollop a heaping tablespoon of pineapple mixture in the center of eachyour sweet adventure begins here!
- Brush edges with beaten egg, top with another square, and seal gently. Brush tops with more egg wash, add a pineapple ring, and sprinkle with sugar for a caramelized crunch.
