Ingredients:
- 2 sticks unsalted butter, softened, plus a bit for greasing the baking pan
- 2 1/4 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- 1 cup rolled oats
- 1/4 teaspoon fine sea salt
- 1 large egg, beaten
- 1 cup Raspberry Preserves (recipe below)

- 1 quart fresh raspberries
- 1 tablespoon lemon juice
- 1 3/4 cups granulated sugar

Instructions
- Preheat your oven to 350F. Butter an 8-inch square baking pan to prevent sticking.
- In a stand mixer bowl, combine the flour, granulated sugar, brown sugar, oats, and salt. Add the softened butter and beaten egg. Mix on low, scraping down the sides as needed, until it forms coarse crumbs. Reserve 2 cups for topping.
- Press the remaining crumb mixture evenly into the prepared pan. Spread Raspberry Preserves over the base, leaving a 1/2-inch border. Sprinkle reserved crumbs on top.
- Bake 40-50 minutes until lightly golden. Cool completely before cutting into 12 irresistible bars.
Raspberry Preserves Instructions
- Combine raspberries and 1/4 cup water in a saucepan over medium heat. Simmer partially covered 8-10 minutes. Strain through a food mill; measure 3 1/2 cups (add water if needed).
- Return liquid to a clean saucepan and simmer. Add sugar in three 1/2-cup batches, dissolving and simmering between each. Cook to 216-218F on a candy thermometer, stirring constantly.
- Cool to room temperature. Yields about 2 cups. Refrigerate up to 1 week if not using immediately.
