- 1 stick butter at room temperature, plus extra for greasing the pan
- 1 1/2 cups all-purpose flour, plus extra for dusting the pan

- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 large very ripe bananas*
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3/4 cup chopped pecans

Honey Butter:
- 1 stick salted butter, softened
- 2 tablespoons honey
- Heat your oven to 350F and place a rack in the middle. Grease and flour a 9x5x3-inch loaf pan thoroughly.
- In a large mixing bowl, whisk together the flour, baking soda, baking powder, and salt until well combined.
- In a smaller bowl, mash the ripe bananas with a wooden spoon, leaving some lumps for texture.
- In another large bowl, using a hand or stand mixer, cream together the 1/2 cup butter and sugar until the mixture becomes light and fluffy. Beat in the eggs one at a time.
- Add the mashed bananas, sour cream, and vanilla extract to the butter mixture and mix until just combined. Fold in the dry ingredients gently along with the chopped pecans.
- Transfer the batter into the prepared loaf pan, then set the pan on a baking sheet.
- Bake for approximately 1 hour and 10 minutes. After baking, let the bread cool in the pan for 5 minutes before transferring it to a wire rack to cool completely.
- Slice and serve warm with the honey butter.
Honey Butter Preparation:
- In a small bowl, blend the softened butter and honey using a wooden spoon until well mixed.
- Serve this sweet butter spread alongside the banana nut bread.
