Pineapple Honey Lemonade Recipe

Ingredients
- 8 ounces pineapple, split into 8 pieces (4 for muddling, 4 for decoration)
- 8 teaspoons honey simple syrup (see recipe below)
- 4 heaping teaspoons chopped fresh mint leaves, plus 4 sprigs for garnish
- Ice cubes
- Juice of 2 lemons
- 16 ounces carbonated water
- 4 ounces limoncello (optional)
Honey Simple Syrup
- 4 tablespoons water
- 4 tablespoons honey

Instructions
- Place one piece of pineapple, 2 teaspoons honey syrup, and 1 teaspoon chopped mint into each of 4 tall glasses and muddle together. Fill each glass halfway with ice.
- In a pitcher, combine lemon juice, seltzer water, and limoncello if desired. Pour the mixture evenly into the glasses and garnish each with a fresh pineapple piece and a mint sprig.
Honey Simple Syrup
- Warm the water and honey in a small saucepan over low heat. Once heated, remove from the heat and allow to cool.
