Pecan Butter Crunch

- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup hot water
- 1 tablespoon butter or margarine
- 2 cups pecans
- 1 teaspoon vanilla extract
- 2 heaping teaspoons baking soda

- Combine the sugar, corn syrup, and hot water in a pan. Cook until the mixture thickens and bubbles (about 230F). Stir in butter and pecans, then keep stirring as it cooks until the nuts brown or pop (around 290F). Remove from heat.
