  • 1 tablespoon coarse cornmeal
  • 1 3/4 teaspoons baking powder

  1. Place an oven rack roughly 8 inches below the broiler element and turn on the broiler to preheat.
  2. In a food processor, mix the flour, cornmeal, baking powder, sugar, salt, and baking soda, pulsing until blended. With the machine running, pour in 1/2 cup water and process, scraping the sides occasionally, until the mixture forms a slightly sticky ball of dough that pulls away from the sides.
  3. Dust a work surface and your hands lightly with flour. Shape the dough into a smooth ball by hand, place it on the surface, add a bit more flour on top, and roll it out to a 10-inch round.
  4. Coat the bottom of a 12-inch cast-iron skillet evenly with the olive oil. Add the dough to the skillet and turn it over so both sides get oiled. Arrange your chosen toppings on top.
  5. Set the skillet over medium-high heat and cook for 5 minutes, then move it under the broiler and cook until the cheese bubbles and turns golden, around 4 minutes more.

Discover the magic of this quick no-yeast dough, powered by baking powder and soda for irresistible lift and texture. Ideal for busy evenings, it transforms simple staples into a fluffy-inside, crispy-outside crust. Pulse for perfect leavening, skillet-sear for golden edges, and broil for that charred, bubbly finish. Load it up with pepperoni, fresh veggies, or BBQ chickenget creative! Keep it tender by not overworking, and enjoy homemade pizza bliss any night of the week.[1][3][4]
