Ingredients
- 1 pound fresh mozzarella cheese
- 1 cup all-purpose flour
- 2 eggs, whisked
- 1 cup dry bread crumbs
- 1/4 cup olive oil
- White wine
- 3 tablespoons capers
- 1 tablespoon butter
- Fresh chopped parsley, for garnish
Instructions
- Slice the mozzarella into 1/4-inch thick rounds. Set up three shallow dishes: one with flour, one with beaten eggs, and one with seasoned bread crumbs (salt and pepper to taste).
- Dredge each slice lightly in flour.
- Dip into the eggs, letting excess drip off.
- Press firmly into bread crumbs for even coverage. For extra crunch, repeat egg and crumb layers.
- Heat olive oil in a skillet over medium-high. Fry slices 1 minute per side until golden, keeping cheese intact.
- Transfer to a platter.
- Deglaze pan with a splash of white wine, scraping bits. Stir in capers, remove from heat, and swirl in butter for a zesty sauce.
- Drizzle sauce over mozzarella, garnish with parsley, and serve hotpure bliss in every gooey bite!
