Ingredients

  • 2 (12-ounce) bags semi-sweet chocolate chips
  • 2 tablespoons butter or shortening
  • 2 teaspoons peppermint extract
  • 24 vanilla wafer cookies

Instructions

  1. Melt chocolate chips and butter together in a small bowl using the microwave at 50% power, heating in 2 or 3 intervals of 30 seconds each, stirring after every interval. Stir in the peppermint extract once the chocolate is melted.
  2. Arrange vanilla wafers on a sheet of aluminum foil and evenly pour the melted chocolate mixture over each cookie, making sure they are fully coated.
  3. Allow them to rest for about 10 minutes, or until the chocolate has hardened.
