Ingredients
- 2 (12-ounce) bags semi-sweet chocolate chips
- 2 tablespoons butter or shortening
- 2 teaspoons peppermint extract
- 24 vanilla wafer cookies
Instructions
- Melt chocolate chips and butter together in a small bowl using the microwave at 50% power, heating in 2 or 3 intervals of 30 seconds each, stirring after every interval. Stir in the peppermint extract once the chocolate is melted.
- Arrange vanilla wafers on a sheet of aluminum foil and evenly pour the melted chocolate mixture over each cookie, making sure they are fully coated.
- Allow them to rest for about 10 minutes, or until the chocolate has hardened.
