Transform your dinner table with this irresistible Mexican Rice Casserole from Ree Drummondbursting with vibrant flavors, cheesy goodness, and fluffy rice that's sure to become a family favorite. It's simple, hearty, and perfect for feeding a crowd!

Ingredients

  • 2 tablespoons canola oil
  • 3 garlic cloves, finely chopped
  • 1/2 to 1 large onion, diced
  • 4 cups long grain rice
  • Two 14.5-ounce cans whole tomatoes
  • One 10-ounce can diced tomatoes with green chiles, like Rotel
  • 1 teaspoon ground cumin (increase if preferred)
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground turmeric
  • 6 to 8 cups low-sodium chicken stock (add more as needed)
  • 1 1/2 cups shredded Cheddar cheese
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Preheat the oven: Set your oven to 375F.
  2. Saut the base: Warm the oil in a large Dutch oven over medium heat, then add the garlic and onion. Saut for 3 to 4 minutes. Lower the heat and stir in the rice, mixing constantly to prevent burning. Continue cooking the rice over low heat for around 3 minutes.
  3. Add flavors and simmer: Stir in the whole tomatoes, diced tomatoes with green chiles, cumin, salt, pepper, cayenne, and turmeric. Mix thoroughly and let cook for about 2 minutes. Pour in the chicken broth and stir well. Increase heat and bring everything to a boil, then lower heat, cover, and cook until the rice is just slightly underdone, about 10 to 15 minutes.
  4. Top and bake: Scatter the grated cheese on top. Bake uncovered until the cheese bubbles and the rice is fully cooked through, about 15 more minutes.
