Ingredients
- 2 tablespoons canola oil
- 3 garlic cloves, finely chopped
- 1/2 to 1 large onion, diced
- 4 cups long grain rice
- Two 14.5-ounce cans whole tomatoes
- One 10-ounce can diced tomatoes with green chiles, like Rotel
- 1 teaspoon ground cumin (increase if preferred)
- 1 teaspoon kosher salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground turmeric
- 6 to 8 cups low-sodium chicken stock (add more as needed)
- 1 1/2 cups shredded Cheddar cheese
- Fresh cilantro, chopped, for garnish

Instructions
- Preheat the oven: Set your oven to 375F.
- Saut the base: Warm the oil in a large Dutch oven over medium heat, then add the garlic and onion. Saut for 3 to 4 minutes. Lower the heat and stir in the rice, mixing constantly to prevent burning. Continue cooking the rice over low heat for around 3 minutes.
- Add flavors and simmer: Stir in the whole tomatoes, diced tomatoes with green chiles, cumin, salt, pepper, cayenne, and turmeric. Mix thoroughly and let cook for about 2 minutes. Pour in the chicken broth and stir well. Increase heat and bring everything to a boil, then lower heat, cover, and cook until the rice is just slightly underdone, about 10 to 15 minutes.
- Top and bake: Scatter the grated cheese on top. Bake uncovered until the cheese bubbles and the rice is fully cooked through, about 15 more minutes.
