Ingredients
- 2 teaspoons fennel seeds
- 2 teaspoons orange zest
- 3 tablespoons orange juice
- 1 teaspoon coarsely cracked black pepper
- 4 ounces feta cheese, cut into 24 cubes (about 1/2-inch each)
- 24 fresh mint leaves
- 1/4 large English cucumber, seeded and sliced into 1/2-inch chunks
- 12 pitted green olives, halved

Directions
- In a medium bowl, stir together fennel seeds, orange zest, orange juice, and black pepper. Add the feta cubes gently and let them marinate for at least 1 hour to absorb the flavors.
- To assemble the skewers, thread a mint leaf about three-quarters of the way up each skewer, followed by one olive half and one cucumber piece. Finally, carefully place a marinated feta cube onto the tip of the skewer.
