Ingredients

  • 2 teaspoons fennel seeds
  • 2 teaspoons orange zest
  • 3 tablespoons orange juice
  • 1 teaspoon coarsely cracked black pepper
  • 4 ounces feta cheese, cut into 24 cubes (about 1/2-inch each)
  • 24 fresh mint leaves
  • 1/4 large English cucumber, seeded and sliced into 1/2-inch chunks
  • 12 pitted green olives, halved

Directions

  1. In a medium bowl, stir together fennel seeds, orange zest, orange juice, and black pepper. Add the feta cubes gently and let them marinate for at least 1 hour to absorb the flavors.
  2. To assemble the skewers, thread a mint leaf about three-quarters of the way up each skewer, followed by one olive half and one cucumber piece. Finally, carefully place a marinated feta cube onto the tip of the skewer.
