Low Country Shrimp Frittata
The secret to this frittata is the seafood seasoning that pairs perfectly with green pepper, celery, onion, and shrimp.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 1/2 cup green peppers, chopped
- 1/4 cup milk
- 10 large eggs
- Kosher salt and freshly ground black pepper
- 1 cup chopped cooked shrimp
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 teaspoon seafood seasoning, such as Old Bay

Directions
- Set your oven to 400 degrees F.
- In a medium oven-safe nonstick skillet over medium-high heat, warm 1 tablespoon of the oil. Add celery, onion, and green peppers and cook, stirring occasionally, until softened, about 5 minutes. Remove from heat, transfer the vegetables to a plate, and set aside. Wipe out the skillet.
- In a large bowl, whisk together milk, eggs, 3/4 teaspoon salt, and a few grinds of pepper. Stir in the cooked vegetables, shrimp, parsley, and seafood seasoning until combined.
- Heat the remaining tablespoon of oil in the skillet over medium-high heat. Pour in the egg mixture and cook until the edges begin to set, about 2 minutes. Transfer the skillet to the oven and bake until the center is firm, 15 to 20 minutes. Allow to rest for 5 minutes before carefully transferring to a serving plate and slicing into wedges.
