Ingredients for one serving:

  • 8 ounces boneless fish fillet, such as snapper or cod
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon quality olive oil
  • 1 large sprig of fresh thyme
  • 2 large green Cerignola olives with pits
  • 1 extra-large egg

Instructions:

  1. Preheat your oven to 400F (200C).
  2. Place the fish fillet on a sheet of parchment paper. Season evenly with salt and pepper. Drizzle with lemon juice and olive oil. Top with thyme sprig and arrange olives alongside.
  3. Whisk the egg with 1 tablespoon water for an egg wash. Brush around the parchment edges, fold in half, and crimp securely to seal the packet like a gift.
  4. Bake on a sheet pan for 12-15 minutes until the fish flakes easily. Serve straight from the parchment for a dramatic, steam-released presentation that wows every time.
