Ingredients for one serving:
- 8 ounces boneless fish fillet, such as snapper or cod
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice
- 1 tablespoon quality olive oil
- 1 large sprig of fresh thyme
- 2 large green Cerignola olives with pits
- 1 extra-large egg
Instructions:
- Preheat your oven to 400F (200C).
- Place the fish fillet on a sheet of parchment paper. Season evenly with salt and pepper. Drizzle with lemon juice and olive oil. Top with thyme sprig and arrange olives alongside.
- Whisk the egg with 1 tablespoon water for an egg wash. Brush around the parchment edges, fold in half, and crimp securely to seal the packet like a gift.
