  • 2 tablespoons unsalted butter
  • 1 yellow onion, thinly minced
  • 1/2 teaspoon sugar
  • 1/2 teaspoon kosher salt, split into portions
  • 1/4 cup white wine
  • 3/4 cup (170 grams) whole-milk Greek yogurt
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper
  • Chives, for garnish
  • Beet chips, for dipping

Instructions
