Ingredients
- 2 tablespoons unsalted butter
- 1 yellow onion, thinly minced
- 1/2 teaspoon sugar
- 1/2 teaspoon kosher salt, split into portions
- 1/4 cup white wine
- 3/4 cup (170 grams) whole-milk Greek yogurt
- 1/2 teaspoon onion powder
- Freshly ground black pepper
- Chives, for garnish
- Beet chips, for dipping

Instructions
- Caramelize the onions: Warm the butter in a large skillet over medium heat. Add the onion, sugar, and 1/4 teaspoon of the salt. Stir constantly until golden and caramelized, about 30-40 minutes. Deglaze with white wine, scraping up browned bits, and cook until mostly evaporated, about 1 more minute. Transfer to a medium bowl and cool completely.
