Korean BBQ Burrito

Beef Marinade:
- 1/2 cup soy sauce
- 1/2 cup sugar
- 1/4 cup rice vinegar
- 3 tablespoons fish sauce
- 3 tablespoons minced garlic
- 3 tablespoons minced ginger (with skin)
- 1 chopped jalapeo
- 2 pounds grass-fed ground beef
Pickled Daikon and Carrots:
- 1 cup rice wine vinegar
- 1/2 cup sugar
- 3 carrots, peeled and cut into thin strips using a mandoline
- One piece (4-5 inches) daikon, peeled and julienned on a mandoline
Korean BBQ Sauce:
- 3 tablespoons minced garlic
- 3 tablespoons minced ginger
- 2 chopped jalapeos
- 1/4 cup vegetable oil
- 1 cup gochujang (Korean chili paste)
- 2 cups sugar
- 2 cups rice wine vinegar
- 1 cup soy sauce
- 3 tablespoons sesame oil
Burrito Components:
- 2 cups steamed brown rice
- Four 14-inch flour tortillas
- 2 avocados
- Kimchi, for garnish
- Fresh mint and cilantro, for garnish
Directions:
- Whip up the irresistible beef marinade by mixing soy sauce, sugar, rice vinegar, fish sauce, garlic, ginger, and jalapeo in a bowl until the sugar fully dissolvesthen toss in the ground beef, stir to coat, and let it chill in the fridge until cooking time.
- Create zesty pickled daikon and carrots: simply combine rice wine vinegar, sugar, carrots, and daikon in a bowl, then refrigerate to let the flavors pop.
- Craft the bold Korean BBQ saucesaut garlic, ginger, and jalapeos in hot vegetable oil until fragrant, stir in gochujang for 1-2 minutes, then add sugar, vinegar, soy sauce, and 2 cups water. Boil, simmer 10 minutes, finish with sesame oil, and chill for that perfect tangy kick.
- Fire up the burrito filling: heat a heavy skillet, add marinated beef, press flat to char one side, flip, break apart, and cook through. Stir in steamed brown rice to fry it up in the savory fatpure magic!
