Italian Ice accompanied by Lemon Syrup and Tutti Frutti Syrup

Michael's note: The syrups in this recipe tend to be quite tart. If you prefer a sweeter syrup, increase the sugar amount before boiling.
Ingredients for the Lemon Syrup:
- 8 lemons, with zest and juice
- 3/4 cup sugar
- Pinch of gray salt
Ingredients for the Tutti Frutti Syrup:
- 1/2 pint strawberries
- 1/2 pint blackberries
- 1/2 pint raspberries
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
- Pinch of gray salt
- Two turns of freshly ground pepper
Ice, for serving
Instructions:
- For each syrup, combine all ingredients in separate medium-sized saucepans. Heat over medium-high until boiling. Take off the heat, let cool, and then strain.
- To prepare the Italian Ice, place a large quantity of ice in a food processor and blend until finely crushed. Alternatively, place ice inside a towel and crush it finely by pounding with a rolling pin or bat. Spoon the crushed ice into bowls and drizzle with Lemon Syrup, Tutti Frutti Syrup, or both to taste.
