Ingredients:

  • 1 1/2 pounds powdered sugar
  • 1/2 cup pomegranate juice
  • 1 cup granulated sugar
  • 1/4 cup corn syrup
  • 1/4 cup water
  • Zest from 2 limes

15 lollipop sticks, candy thermometer

Instructions:

  1. Spread powdered sugar evenly across a half sheet pan to about 1/2-inch thickness. Using a tablespoon or your chosen mold, firmly press into the sugar to create indentations at least 1/4-inch deep, ensuring the pan surface doesn't show through. Insert lollipop sticks about 1/4-inch into each mold, then build sugar dams around each stick opening to prevent syrup from leaking. Arrange 4 rows of 3 molds each.
  2. In a small saucepan, simmer pomegranate juice over high heat until it reduces to about 2 tablespoons, approximately 2 to 3 minutes. Reserve only half of this concentrated juice for the candy mixture.
  3. Combine granulated sugar, corn syrup, and water in a heavy saucepan over medium-high heat. Bring to a boil and continue heating until a candy thermometer reaches 300F (hard crack stage), about 10 to 12 minutes. Remove from heat and carefully stir in 1 tablespoon of reduced pomegranate juice and lime zest using a heat-resistant rubber spatula. Transfer the mixture to a liquid measuring cup for easier pouring.
  4. Working quickly and carefully, pour the hot candy mixture into each prepared mold. Allow the lollipops to set and harden completely at room temperature for 15 to 20 minutes. Optionally brush away excess powdered sugar with a pastry brushthough leaving it creates a beautiful handcrafted appearance with a lovely contrast between the glossy candy and powdered sugar coating.
