Pizza Dough:
- 1/8-ounce yeast
- 3/8-ounce sugar
- 16 ounces water
- 1/4 cup olive oil
- 1/2-ounce salt
- 2 pounds flour
- 1/4 cup cornmeal
Tomato Sauce:
- 4 vine-ripened tomatoes, peeled, seeded, and chopped
- 1 tablespoon chopped roasted garlic
- 1/4 cup chopped red onion
- 2 tablespoons thinly sliced scallions
- 2 tablespoons taro oil or olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Yellow Tomato Sauce:
- 2 ripe yellow tomatoes, peeled, seeded, and chopped
- 1 teaspoon minced garlic
- 1 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
Kalua Pork:
- 5 pounds pork butt, divided into thirds
- 1 1/2 tablespoons liquid smoke
- 2 1/2 tablespoons sea salt
- 3 cups chicken stock
- 10 Ti leaves or green cabbage leaves
Toppings:
- 3 ounces shredded Fontina cheese
- 1 ounce grated Parmesan cheese
Cooking Instructions:
- Combine yeast, sugar, and 1 cup of water in a bowl and dissolve the yeast. Mix in remaining ingredients except cornmeal on slow speed with a dough hook until the dough forms a ball. Increase speed to medium and continue mixing for 1-2 minutes until the dough is smooth and elastic. Transfer dough to an oiled bowl, cover, and let rest about 4 hours.
- For the tomato sauce, mix all ingredients in a bowl thoroughly and season to taste. Let flavors meld for at least 30 minutes or longer.
- Blend all ingredients for the yellow tomato sauce until smooth and adjust seasoning as needed.
- Preheat oven to 350F. Rub pork with liquid smoke and sea salt. In a roasting pan, line half of the leaves, place pork on top, and pour in chicken stock without pouring it directly on pork. Cover with remaining leaves, seal with foil, and roast for about 3 1/2 hours until pork reaches a minimum of 165F internally and can be shredded easily.
- Roll or press dough to approximately 1/4 inch thickness. Lay dough on a cornmeal-dusted pizza peel. Spread yellow tomato sauce evenly, then add Fontina cheese, pulled pork, and tomato mixture. Finish with grated Parmesan. Bake in a hot oven, turning occasionally until the crust is golden and browned evenly. Slice and serve.
