Ingredients
For the Chicken:
- 3 lbs chicken wings, cut at the joint and wing tips discarded
- Kosher salt and ground black pepper
For the Tequila-Lime Sauce:
- 1 tsp finely grated lime peel
- 1/2 cup fresh lime juice
- 1/4 cup tequila
- 1 tbsp agave nectar (agave syrup)
- 1 tsp ground cumin
- 1 tsp adobo sauce
- Kosher salt and ground black pepper
- Chopped fresh cilantro (optional garnish)
Instructions
- Wing Preparation: Heat oven to 350F. Sprinkle wings with salt and pepper and arrange in a single layer on a baking sheet. Bake until browned and crisp, about 45 minutes.
- Make the Sauce: In a mixing bowl, combine lime zest, lime juice, tequila, agave nectar, cumin, adobo sauce, 1/2 teaspoon salt, and 1/2 tablespoon black pepper. Pour over the baked wings and let marinate for at least 30 minutes.
- Grill and Finish: Preheat grill to high and grill wings until charred marks appear, turning occasionally, about 1015 minutes. Simmer the remaining marinade in a small saucepan (or on the grill) until slightly thickened, about 8 minutes. Drizzle the reduced sauce over the wings and sprinkle with cilantro if desired.
