- 4 boneless, skinless chicken breast halves (approx. 8 ounces each)
- 1/4 cup extra-virgin olive oil
- Zest from 1 lemon (about one teaspoon)
- 1/4 cup freshly squeezed lemon juice (roughly 2 lemons)
- 2 garlic cloves, finely minced or grated
- Kosher salt and fresh ground black pepper, to taste
Sour Cream Caesar Dressing:
- 1 cup light sour cream
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice, freshly squeezed (about half a lemon)
- 1 tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 anchovy fillet, mashed into a paste with a fork
- 1/2 clove of garlic, grated or finely minced
- Kosher salt and ground black pepper, to taste

- 1/2 pint of cherry tomatoes, cut into quarters
- 1 romaine heart, cut into bite-sized pieces

- 4 sundried tomato tortillas (12-inch), toasted lightly with oil
