  • 1/4 cup freshly squeezed lemon juice (roughly 2 lemons)
  • 2 garlic cloves, finely minced or grated
  • Kosher salt and fresh ground black pepper, to taste

Sour Cream Caesar Dressing:

  • 1 cup light sour cream
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon lemon juice, freshly squeezed (about half a lemon)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 anchovy fillet, mashed into a paste with a fork
  • 1/2 clove of garlic, grated or finely minced
  • Kosher salt and ground black pepper, to taste

Sandwich Build:

  • 1/2 pint of cherry tomatoes, cut into quarters
  • 1 romaine heart, cut into bite-sized pieces
  • Parmesan Croutons, recipe below
  • 4 sundried tomato tortillas (12-inch), toasted lightly with oil

  • 2 tablespoons fresh grated Parmesan
