Grilled Chicken Cordon Bleu

Chicken cordon bleu, inspired by the blue ribbons of French knights, has been a US favorite for over 50 years and grills wonderfully thanks to its cheese and ham filling that keeps the lean chicken moist.

Ingredients
- 4 skinless, boneless chicken breasts (around 8 ounces each)
- Extra-virgin olive oil, as needed
- Kosher salt and freshly ground black pepper
- 8 thin slices Swiss cheese (about 4 ounces)
- 4 slices smoked deli ham, such as Black Forest (about 4 ounces)
- 1/2 cup sour cream
- 2 teaspoons fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 1/2 small garlic clove, finely grated
- Chopped fresh chives, for garnish
Instructions
- Preheat the grill to medium heat. Butterfly the chicken: Slice each breast horizontally halfway through the thickest part and open like a book. Gently pound between two sheets of parchment paper to an even 1/4-inch thickness without tearing.
- Lightly brush the chicken with olive oil and season with salt and pepper. On each breast, layer a slice of cheese, followed by ham, then cheese. Roll the chicken up tightly and secure with toothpicks; if any meat tears, roll with that side inward to prevent cheese from escaping. Rub rolls with olive oil and season with salt and pepper.
- Place the rolls on the grill, turning occasionally, grilling until cooked through, about 1520 minutes. Transfer to a cutting board and let rest for 510 minutes. Meanwhile, prepare the sauce by mixing sour cream, 3 tablespoons water, lemon juice, mustard, and garlic. Season with salt and pepper.
- Pour sauce onto a serving platter. Remove toothpicks from the chicken (twisting to release if stuck), slice the rolls, arrange on top of the sauce, and sprinkle with chives.
