Ingredients

  • 3 pounds red potatoes
  • Salt
  • 1 cup mayonnaise
  • 3 tablespoons freshly chopped parsley
  • 2 tablespoons yellow mustard
  • 2 stalks celery, diced
  • 2 chives, chopped
  • 1 white onion, finely diced
  • Freshly ground black pepper
  • 6 hard-boiled eggs, chopped

Instructions

  1. Put the potatoes and 2 heaping tablespoons of salt into a large pot filled with water. Bring it to a boil and cook the potatoes until they are tender when pierced with a fork, about 10 to 15 minutes. Then chop the potatoes into pieces about inch in size.
  2. In a spacious bowl, combine the potatoes, mayonnaise, parsley, mustard, celery, chives, onion, and salt and pepper to taste. Gently toss the potatoes in the dressing, then fold in the chopped eggs carefully to avoid breaking them. Serve right away.

Corn Milk Bread (Cornbread) Recipe

It's the "corniest" bread you'll ever make. Growing up, the blue box cornbread mix we all know was my go-to snack, so as an adult, I decided to make my own version. One of my fondest memories is nibbling the crispy edges off the hot cornbread with a little bit of butter. This recipe is an ode to the staple of my youth, and the hot cast-iron skillet makes sure the edges are extra crispy. Feel free to add some extra spice to it, turn it into a sandwich or croutons or use it as the base for your stuffing.
