Ingredients
- 3 pounds red potatoes
- Salt
- 1 cup mayonnaise
- 3 tablespoons freshly chopped parsley
- 2 tablespoons yellow mustard
- 2 stalks celery, diced
- 2 chives, chopped
- 1 white onion, finely diced
- Freshly ground black pepper
- 6 hard-boiled eggs, chopped
Instructions
- Put the potatoes and 2 heaping tablespoons of salt into a large pot filled with water. Bring it to a boil and cook the potatoes until they are tender when pierced with a fork, about 10 to 15 minutes. Then chop the potatoes into pieces about inch in size.
- In a spacious bowl, combine the potatoes, mayonnaise, parsley, mustard, celery, chives, onion, and salt and pepper to taste. Gently toss the potatoes in the dressing, then fold in the chopped eggs carefully to avoid breaking them. Serve right away.
