- 2 cups whipping cream
- 1 cup grated Grana Padano or Parmigiano-Reggiano cheese
- 4 tablespoons premium aged balsamic vinegar
1. Combine the cream and grated cheese in a large stainless-steel bowl set over a pot of simmering water. Whisk constantly until the cheese fully melts and the mixture turns smooth and pourable.
2. Strain the mixture through a fine-mesh sieve to remove any solids, then pour it into a deep baking dish.
3. Let the mixture cool, then refrigerate for 8 to 10 hours until firm. When set, use a melon baller to scoop out small, ice-cream-like spheres.
4. Serve the scoops in glasses or small bowls and finish with a drizzle of premium aged balsamic vinegar.
