Ingredients

  • Cooking spray
  • 8 boneless, skinless chicken breast halves (about 4 ounces each)
  • Salt and freshly ground black pepper
  • 10-ounce package frozen chopped spinach, thawed
  • 1/2 cup light mayonnaise
  • 1/4 cup vermouth
  • 6 tablespoons prepared white horseradish
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons finely chopped fresh parsley leaves
  • 4 cups cooked rice (can be regular or instant)
  • Lemon wedges for garnish

Instructions
