Ingredients
- 1 cup Base Vinaigrette (see recipe below)
- 2/3 cup goat cheese, crumbled
- 1/4 cup fresh blackberries, blended
- 1 tablespoon finely chopped chives
- Kosher salt and freshly ground black pepper
Base Vinaigrette (Yield: 1 cup)
- 1/4 cup red wine vinegar
- 1 teaspoon minced shallots
- 1/4 cup + 2 tablespoons canola oil
- 1/4 cup + 2 tablespoons extra-virgin olive oil
- Kosher salt and black pepper to taste
Instructions
- In a medium-sized bowl, whisk the Base Vinaigrette, crumbled goat cheese, pureed blackberries, and chopped chives together until smooth and consistent. Add salt and black pepper as desired.
Base Vinaigrette Instructions
- In a medium bowl, combine the red wine vinegar, minced shallots, and 1 teaspoon water. Gradually pour in both the canola and olive oils while whisking. Season with a pinch of salt and black pepper.
