Ingredients
- 1 large ring bologna
- Butter, for frying
- Extra-virgin olive oil, for frying
- Crackers, for serving
Instructions
- Warm a large, preferably cast-iron, skillet over medium heat. Peel off the casing from the ring bologna and cut it diagonally into 1/2-inch thick slices. Once the pan is hot, drop in a chunk of butter and a spoonful of olive oil. Arrange the bologna slices in a single layer, leaving a little space between each piece. Fry until both sides develop a deep pink, crispy edge. Transfer the cooked slices to a plate, cover to keep warm, and continue frying the remaining bologna.
