Ingredients
- 2 tablespoons kosher salt
- 4 cups water
- 1 pound fresh mozzarella cheese curds
Cooking Instructions
- Dissolve 2 tablespoons of kosher salt into 4 cups of water heated to a simmer.
- Chop the fresh mozzarella curds into pieces and place them into a large bowl. Pour the salted warm water over the chopped curds.
- Using two wooden spoons, press and push the cheese curds together to form a single ball. Gently move this ball within the water for about one minute until it becomes soft and stretchy.
- Wearing thick dishwashing gloves for protection, take the curd ball from the water and stretch it into a long strip. Then fold the strip back onto itself. Avoid overworking the cheese to prevent toughness.
- Pinch portions off the stretched cheese to form individual balls, tucking the ends under each ball for a smooth finish.
- Place the formed mozzarella balls into a bowl of cool water to set.
- Store the mozzarella balls submerged in the salted water used earlier to keep them moist and flavorful.
