Whip up this refreshing rosemary arugula croutons salad in just 20 minutes! Crispy homemade croutons tossed with peppery arugula, toasted pine nuts, and zesty Citrus-Herb Sauce create an irresistible side dish that bursts with flavor. Perfect for elevating any mealyour guests will love it!

  • 1/2 (8-ounce) loaf rosemary bread, diced into 1/2-inch cubes* (see Cook's Note)
  • Olive oil, for drizzling
  • 3 cups packed arugula
  • 1/3 cup toasted pine nuts
  • 1/4 cup Citrus-Herb Sauce (refer to Roasted Citrus-Herb Game Hen recipe)
  • Salt and freshly ground black pepper, to taste
  1. Preheat your oven to 350F (175C).
  2. Spread the bread cubes on a baking sheet, drizzle with olive oil, and bake for 12 to 15 minutes until golden and crispy. Remove and let cool.
