Lightly coat each fillet on both sides with the seasoned cracker meal. In a large shallow pan, heat about 4 to 6 tablespoons of cooking oil. Place the sand dabs into the pan and fry over medium heat for 1 to 2 minutes per side. Carefully remove the fillets with a spatula and arrange them on a warmed serving platter. 2. Drizzle a small amount of the pan juices over the cooked fish to keep them moist and warm. Continue frying the remaining fillets, adding more oil as necessary. Season with salt and pepper to taste, then sprinkle with chopped parsley. Serve with lemon wedges on the side for a fresh finish.Categories:
