Ingredients
- Nonstick cooking spray
- 1 stick (8 tablespoons) unsalted butter
- Two 10-ounce bags of mini marshmallows, reserve 4 for garnish
- 1 teaspoon pure vanilla extract
- One 12-ounce box of crispy rice cereal (roughly 12 cups)
- 1 1/2 ounces of chocolate-covered wafer candy bars, such as Kit Kat, chopped into 1/4-inch pieces (about 1/3 cup)
- 3 tablespoons chopped green gummy candies
- 1 teaspoon ground cinnamon
- 2 tablespoons sugar
Garnish:
- 1/2 cup dried pineapple rings, halved (approximately 2 ounces)
- 1/2 cup dried kiwi slices (around 2 ounces)
- 1/2 cup grapefruit gummy candy (about 2 ounces)
Directions
- Spray a wooden spoon or silicone spatula with nonstick cooking spray. Line a baking sheet with parchment paper and set it aside.
- Melt the butter in a large pot over medium heat. Stir in the marshmallows (leaving 4 aside for garnish) until fully melted, about 5 minutes. Add the vanilla and combine.
- Add the crispy rice cereal and stir with the sprayed utensil until every piece is coated and the mixture is well blended.
- Lightly coat your hands with nonstick cooking spray to avoid sticking. Split the mixture into two parts: one quarter (around 9 ounces) and three quarters (about 1 1/2 pounds). Shape the larger portion into a teardrop form about 8 inches wide at the broad end and 12 inches long.
- Use your spoon or hands to create a hollow about 4 inches deep at the narrower tail end, mimicking where stuffing would go in a real turkey. Do not hollow the whole body, just an indentation.
- Reserve one-third of the smaller portion for wings. From the remaining two-thirds, mold two drumsticks and attach them on both sides of the hollow.
- Create two wings from the reserved third and affix them to the wide end of the teardrop shape.
- Transfer the completed turkey shape to a serving dish and fill the cavity with chopped chocolate wafer candy. Stir in some green gummy slices to look like parsley for a decorative touch.
- In a small bowl, combine cinnamon and sugar, then sprinkle this mixture over the "turkey" for a browned effect.
- Attach the 4 reserved mini marshmallows to the drumstick ends to resemble bone tips.
- Arrange dried pineapple halves, dried kiwi slices, and grapefruit gummy candies around the turkey as garnish.
