Ingredients
- 3/4 pound (3 sticks) unsalted butter
- 1 cup light brown sugar
- 1 1/8 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 3 cups rolled oats (not instant)
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon kosher salt
- 2 1/2 teaspoons baking soda
- 1 1/2 cups raisins
Instructions
- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter until it becomes light and fluffy. Gradually add both sugars and continue creaming until the mixture is smooth and airy. Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, combine the oats, flour, salt, and baking soda. Slowly add this dry mixture to the butter mixture, mixing just until everything is blended. Stir in the raisins until evenly distributed.
- Drop the dough by tablespoonfuls onto baking sheets, spacing each cookie at least 2 inches apart. Bake until the edges are golden and crisp, about 8 to 10 minutes. Allow the cookies to cool on wire racks before transferring to an airtight container for storage.
