Ingredients
- 3 1/2 cups all-purpose flour (plus extra for dusting)
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 2 sticks unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 extra-large eggs
- 1 1/2 teaspoons vanilla extract
- For decorating: royal icing, fondant, or a cookie glaze
Directions
- Preheat: Preheat oven to 350F.
- Mix dry ingredients: In a medium bowl, whisk together the flour, salt, and baking powder.
- Cream butter and sugar: In a separate large bowl, beat the softened butter and granulated sugar with a hand mixer until light and fluffy (about 2 minutes). Beat in the eggs one at a time, then stir in the vanilla extract.
- Form dough: Fold the dry ingredients into the wet ingredients with a spatula until a dough forms.
- Chill and roll: On a floured surface, divide the dough in half. Cover one half with wax paper and roll it to 1/4-inch thickness. Refrigerate the remaining dough until ready to use.
- Cut shapes: Use cookie cutters to cut shapes from the rolled dough and place them on a parchment-lined baking sheet. Repeat with the second half of dough.
- Bake: Bake in the preheated oven for 1113 minutes. Allow cookies to cool on the baking sheet.
- Decorate: Once cooled, decorate with royal icing, fondant, or your favorite glaze.
