Ingredients

  • cup olive oil
  • 2 cloves garlic, minced
  • cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian parsley
  • teaspoon salt
  • 6 ears yellow corn, husked and cut in half crosswise

Instructions

  1. Warm the olive oil in a small heavy skillet over medium heat. Add the garlic and saut until soft and aromatic, about 1 minute. Remove from heat and let it cool. Reserve 2 tablespoons of the Parmesan cheese. Stir the remaining cheese into the garlic oil together with the parsley and salt.
  2. Boil the corn in a large pot of salted boiling water until tender but still crisp, around 5 minutes. Use tongs to move the corn to a serving plate. Generously brush the garlic-Parmesan mixture over the warm corn. Top with the reserved 2 tablespoons of Parmesan cheese and serve immediately.
