Ingredients
- 1 cup heavy cream
- 1 tablespoon unsalted butter
- Pinch of kosher salt
- 12 ounces good-quality semisweet chocolate, coarsely chopped
- 3 to 4 tablespoons cognac
- 1/2 teaspoon raspberry extract
- 1/2 teaspoon pure vanilla extract
- 1 to 2 cups Dutch process cocoa powder
Instructions
- Place the heavy cream, butter and salt in a small saucepan and heat over medium until the mixture just begins to simmer. Place the chopped chocolate in a heatproof bowl, pour the hot cream mixture over the chocolate and let it sit undisturbed until the chocolate has fully melted, about 10 minutes.
- Stir the chocolate and cream together with a whisk or rubber spatula until smooth and well blended. Add the cognac, raspberry extract and vanilla extract, then whisk until the ganache is glossy and evenly mixed. Pour the ganache into a shallow container, cover and chill in the refrigerator until firm, at least 3 hours or overnight.
- Line a baking sheet with parchment paper. Place the cocoa powder in a shallow dish. Using a tablespoon, scoop out portions of the chilled ganache, roll them into balls, then roll each ball in the cocoa powder. Place the truffles on the prepared baking sheet, cover with plastic wrap and refrigerate until firm, at least 1 hour or overnight.
Make-Ahead Tip
The uncoated truffles can be made up to 2 weeks ahead. Wrap them tightly in plastic wrap and freeze. When ready to use, let them sit at room temperature, still wrapped, for about 20 minutes. Then unwrap and roll in your chosen coating.
