Ingredients:
- 1 pound bittersweet chocolate
- 12 ounces semisweet chocolate
- 3/4 cup egg whites (from 4 to 5 extra-large eggs), at room temperature
- 1 1/2 cups granulated sugar
- 1/4 teaspoon cream of tartar
- 3/4 teaspoon kosher salt
- 1 1/2 pounds unsalted butter, softened
- 3 teaspoons pure vanilla extract
- 3 teaspoons instant espresso powder dissolved in 1 1/2 teaspoons water
- 3 tablespoons dark rum (optional)
Instructions:
- Chop both chocolates and melt them in a heatproof bowl over simmering water, stirring until smooth. Set aside to cool to room temperature.
- In an electric mixer with whisk attachment, whisk egg whites, sugar, cream of tartar, and salt over simmering water until warm (about 5 minutes). Beat on high until chilled and stiff peaks form, around 5 minutes.
- On medium speed, add softened butter 1 tablespoon at a time. Scrape bowl, then mix in cooled chocolate, vanilla, espresso, and rum (if using) for 1 minute. If too soft, chill briefly and re-beat for perfect firmness.
