Chocolate Sandwich Cookies with Vanilla Cream Filling

Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup Dutch-processed cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 5 ounces (1 1/4 sticks) unsalted butter, softened to room temperature
- 1 1/2 cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Vanilla Cream Filling (recipe belowirresistibly creamy!)
Vanilla Cream Filling
- 2 ounces (1/2 stick) unsalted butter, softened
- 1/4 cup vegetable shortening
- 2 teaspoons vanilla extract
- 2 cups confectioners' sugar, sifted
Instructions
- Position a rack in the center of your oven and preheat to 375F (190C). Get ready to bake cookies that crunch with every bite!
- In a food processor or electric mixer bowl, thoroughly blend the flour, cocoa, baking soda, baking powder, and salt. On low speed, mix in the softened butter, then the egg and vanilla until the dough forms a smooth mass.
- Drop rounded half-teaspoons of dough onto a non-stick baking sheet, spacing 2 inches apart. Dampen your fingers to shape and slightly flatten each into rounds. Bake 8 minutes, rotating the sheet halfway for even crispness, until firm. Cool on the sheet over a wire rack.
- Assemble by placing half the cookies flat-side down. Fill a piping bag with a 1/2-inch star tip with Vanilla Cream Filling. Pipe teaspoon-sized swirls on each, top with remaining cookies flat-side down, and press gently into perfect sandwiches.
Vanilla Cream Filling Preparation
- In an electric mixer, beat the butter and shortening until smooth and combined.
- On low speed, gradually add vanilla and sifted confectioners' sugar until blended.
- Crank to high and beat 2-3 minutes until light, fluffy, and dreamyready to sandwich your cookies!
