Caramel Nut Clusters
Imagine the rich, buttery crunch of homemade caramel embracing toasted nuts, crowned with silky chocolate and a flaky sea salt kiss. Ready to create kitchen magic? Let's dive in!
- Prepare the caramel: In a small saucepan, combine 2 cups sugar, 1/4 cup light corn syrup, and 1/2 cup water. Heat over medium-high until boiling, stirring just until sugar dissolves. Swirl gently (no stirring!) and cook to light amber at 320Fabout 8-10 minutes. Off heat, whisk in 1/2 cup heavy cream, then 2 tbsp unsalted butter, 1 tsp vanilla, and a pinch of salt. Return to low heat; whisk smooth.
- Fold in 1 1/3 cups chopped nuts. Cool until it holds shape. Dollop onto lightly oiled parchment. Set, then top with melted chocolate and coarse sea salt.
