Chicken Gravy, recipe follows
1 cup canned green chiles, chopped and drained
1 medium onion, finely chopped
1 clove garlic, minced
1 cup sour cream
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Twenty-four 6-inch corn tortillas
3 cups shredded Cheddar
Chicken Gravy:
6 tablespoons butter6 tablespoons all-purpose flour
1 cup chicken stock
1 cup milk

- Place the chicken in a large stockpot, cover it with water, and add a generous pinch of salt. Boil until tender, around 30 minutes. Take the chicken out of the pot and let it cool. Once cooled, shred the chicken and set it aside. Save 3 1/3 cups of the broth (use 1 cup for the chicken gravy; add store-bought stock if needed to make up the amount.)
- Heat the oven to 350 degrees F. Coat a 13- by 9-inch baking dish with cooking spray.
- In a big saucepan, mix 2 1/3 cups of the saved broth with the Chicken Gravy, green chiles, onions, garlic, sour cream, cumin, salt, and pepper. Heat until boiling while stirring all the time. Then take it off the heat.
- Put 1 cup of the blend into the greased baking dish. Layer 6 tortillas on top, followed by 1 cup of shredded chicken and 1/2 cup Cheddar. Do this layering three additional times, finishing with cheese on top. Pour any leftover mixture over the cheese layer. Ensure all tortillas are fully covered to prevent them from hardening in the oven. Bake without a cover for 30 minutes.
Chicken Gravy:
- In a medium saucepan, melt the butter and stir in the flour to create a roux. Heat on medium, stirring nonstop, until it bubbles and the flour becomes lightly browned. Slowly add the stock and milk while whisking, and keep stirring on medium heat. After thickening in about 5 minutes, season with salt and pepper.
