Ingredients
- cup unsalted butter, plus 1 extra tablespoon
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 whole chicken (5 to 6 lbs), skin on, cut into 8 pieces, including neck
- 6 cups water
- 6 cups low-sodium chicken broth
- 56 sprigs fresh thyme, plus 1 tablespoon leaves chopped
- Small bunch parsley stems, plus 1 tablespoon leaves chopped
- 2 sprigs fresh sage, plus 1 tablespoon leaves chopped
- 1 teaspoon whole black peppercorns
- 1 celery stalk, trimmed and halved
- 2 cups all-purpose flour, plus extra as needed
- 1 tablespoon kosher salt, plus additional for taste

Instructions
- In a large soup pot over medium-high heat, melt cup butter. Add onion and garlic; cook 3 minutes until softened but not browned. Add chicken pieces, water, and broth. Tie thyme sprigs, parsley stems, and sage with twine into a bundle; add to pot with peppercorns and celery. Bring to a boil, then simmer gently, skimming foam. Cook until chicken shreds easily, about 30 minutes. Remove chicken to cool; discard bundle and celery. Shred chicken, discarding bones; reserve broth.
- In a bowl, mix 2 cups flour, chopped herb leaves, and 1 tablespoon salt. Make a well; add 1 cup hot strained broth (with fat). Stir with a fork, adding flour or broth until soft dough forms. If sticky, add flour 1 tablespoon at a time. On floured surface, roll to - to -inch thick. Cut into 2-inch squares, then halve diagonally into triangles.
- Bring broth to a simmer. Drop in triangles without overlapping; leftover flour thickens broth. Cook until they float. For thicker broth, mash 1 tablespoon soft butter with 1 tablespoon flour; whisk in gradually. Add shredded chicken and serve steaming hot for ultimate comfort!
