Instructions
Whip up this irresistible Grilled Chicken Caprese Baguette in just 30 minutes! Juicy grilled chicken topped with melty mozzarella, vibrant tomato sauce, and fresh basil on toasted baguettepure summer bliss on a plate.
- Pulse a 1 1/2-inch baguette section in a food processor for breadcrumbs. Combine quartered tomatoes with 1/4 teaspoon Kosher salt and pulse until finely chopped. In a medium skillet, heat 1 1/2 tablespoons extra-virgin olive oil over medium; saut thinly sliced garlic until golden, about 1 minute. Add red pepper flakes and tomato mixture; simmer 8-10 minutes until thickened.
- Meanwhile, preheat grill to medium-high. Toss chicken breasts with remaining 1/2 tablespoon olive oil, dried oregano, and 1/4 teaspoon salt. Slice remaining baguette lengthwise, then into four pieces.
- Grill bread cut-side down until toasted. Grill chicken 5 minutes per side until cooked through. In the last 2 minutes, top with mozzarella slices and cover to melt.
- Spread tomato sauce on toasted bread, sprinkle half the Parmesan. Add grilled chicken, more sauce, remaining Parmesan, and chopped basil. Serve hot and savor every bite!
