Ingredients
Pudding
- 2 cups half-and-half
- 1 cinnamon stick
- 1 whole egg plus 2 large egg yolks
- 3/4 cup packed dark brown sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon fine salt
- 2 tablespoons unsalted butter
- 2 teaspoons golden rum
Warm Buttered-Rum Raisins
- 3 tablespoons dark brown sugar
- 1/4 cup golden rum
- 1/3 cup raisins
- 2 tablespoons butter
- 1/2 cup full-fat sour cream or yogurt
Instructions
Make the Pudding: Gently warm the half-and-half with the cinnamon stick in a medium saucepan over low heat until steaming. In a bowl, whisk the egg, yolks, brown sugar, cornstarch, and salt. Gradually whisk in the hot half-and-half to temper. Return to the saucepan; cook over medium heat, stirring constantly, until boiling (about 4 minutes). Boil 1 more minute until thick. Strain into a bowl, then stir in butter and rum.
- Divide pudding into 4 ramekins. Chill until set, about 2 hours.
Make the Raisin Topping: In a small saucepan, boil 3 tablespoons sugar with 3 tablespoons water until dissolved, about 2 minutes. Add rum and raisins; simmer 2 minutes. Swirl in butter off heat. Keep warm.
